Herb Flatbread

I've been so busy with work and the holidays that I've really neglected this blog! It's time to jump back in with a yummy flat bread recipe!  This is great served with balsamic bread dip, hummus, or even as a panini sandwich!

Ingredients:
2 3/4 cups flour
1 tsp salt
1 tsp sugar
1 Tbs (1 pck) yeast
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp fresh or dry basil
1/2 tsp rosemary
1 Tbs vegetable oil
1 cup warm water
 Olive oil
  2 Tbs grated Parmesan cheese
1 cup mozzarella cheese
    Directions:
    Mix the water warm water and sugar.  Add the yeast and let proof for 10 min.
    In a large bowl combine flour, salt garlic, oregano, basil, thyme, rosemary.
    Add yeast to flour mixture. Add vegetable oil.  Mix and pour dough pour onto a lightly floured surface.  Knead dough until smooth and elastic, 7-8 min. 
    Place dough in a well-oiled bowl and cover with a towel. Let sit in warm place for 30-40 min.

    After first rise, punch dough down and place on a greased baking sheet. Pat into a 1/2 inch thick rectangle. Brush top with olive oil. Sprinkle with Parmesan cheese and mozzarella cheese. Let rise 30 minutes more.  
    Bake in preheated oven for 12-15 minutes, or until golden brown. Serve warm.
